"Knickerbockers" just has a long history in NYC - from the knickerbockers who wore knickers, smoked very long-stemmed pipes and played fashionable, silly games in social clubs. In New York, a knickerbocker was always someone who insisted on doing something their way, and damn the fashion. That's pretty much what most New Yorkers would call "the New York attitude."

As an example, I have a very dear friend whose favorite expression is, "it's every New Yorker's God-given right to be an asshole." It's more about the attitude than about the fashion really, IMHO.
